Quick Garlic Rice (Leftover Rice Makeover) Recipe South Indian Style

Green Chilies: 1-2 (slit)

Onion: 1 large (thinly sliced)

Turmeric Powder: A pinch (for color)

Cilantro: Freshly chopped for garnish

Preparation Steps

1. Preparing the Garlic Masala

Take the peeled garlic cloves in a mortar and pestle.

Add red chili powder and salt. Pound them together slightly.

Add one teaspoon of oil to the mixture and pound it into a coarse paste.

2. Mixing the Rice

Break the lumps in the leftover rice to make it grainy.

Add the prepared garlic-chili paste to the rice and mix thoroughly until every grain is coated.

3. The Tempering (Tadka)

Heat oil (or ghee) in a pan.

Add mustard seeds and cumin seeds. Once they splutter, add curry leaves, hing, and green chilies.

Add the sliced onions and sauté until they turn golden brown.

4. Final Toss

Add the masala-mixed rice to the pan.

Add a pinch of turmeric for a vibrant color.

Sauté on medium heat for 2-3 minutes, stirring constantly.

Garnish with fresh coriander leaves.
