Brought to you by Triveni Patil on Uttarakarnataka Recipes, this Instant Rava Unde (Rava Laddu) requires no sugar syrup, making it foolproof and beginner-friendly. In just about 10 minutes, you can whip up soft, delicious, melt-in-your-mouth laddus using only a few basic pantry staples.
Ingredients You’ll Need:
- Chiroti Rawa (Fine Semolina) or Medium Rawa: 1.5 cups
- Dry Coconut (Grated): 1 cup (freshly grated dried coconut or desiccated coconut)
- Powdered Sugar: 1 cup (adjust up to 1.5 cups if you prefer it sweeter)
- Ghee: 3 to 4 tablespoons
- Warm Milk: 2 to 3 tablespoons (used optionally to help bind the mixture easily)
- Optional Add-ins: Cardamom powder, fried dry nuts (cashews/raisins)
Step-by-Step Instructions:
Step 1: Dry Roast the Rawa
- Place a heavy-bottomed pan on the stove and heat it on low to medium flame.
- Add 1.5 cups of Chiroti Rawa directly to the dry pan without adding any ghee.
- Roast continuously for about 5 to 6 minutes. You will know it’s done when a wonderful aroma fills the air and the rawa changes its color slightly to a light shade. Turn off the heat.
Step 2: Add Dry Coconut
- Add 1 cup of grated dry coconut to the roasted rawa . (Tip: If using fresh dry coconut, peel the brown skin off, grate it, and pulse it in a mixer to get the right texture) .
- Sauté it slightly with the warm rawa until the raw smell of the coconut disappears . Remove the mixture from the heat and let it cool down slightly (it should be warm to the touch, not piping hot).
Step 3: Mix with Powdered Sugar & Ghee
- To the warm rawa-coconut mixture, add 1 cup of powdered sugar .
- Add 3 to 4 tablespoons of ghee.
- Using your hands, thoroughly rub and mix everything together . This helps release the aroma and allows the warm mixture to absorb the ghee evenly.
- Optional: At this stage, you can mix in cardamom powder or fried dry fruits if you prefer a richer taste.
Step 4: Bind the Laddus
- Try shaping the mixture into tight round balls (laddus).
- If the mixture feels too crumbly or dry to hold its shape, sprinkle 2 to 3 tablespoons of warm milk (or melted ghee) gradually and mix well . Do not add too much liquid.
- Take portions of the mixture in your hands and press firmly to form smooth, round Rava Undes of your desired size.
