In This article Explained how to make incredibly soft and spongy “Gudu-Gudu” (holey/porous) dosas without using urad dal, poha (avalakki), rava, soda, or oil.

These dosas stay soft even after several hours, making them perfect for lunch boxes.
Ingredients
Raw Rice (Ration Rice): 2 cups
Cooked Rice (Anna): ½ cup
Grated Coconut: ⅓ cup (brown skin removed)
Coconut Water: A small amount (optional/as needed)
Sugar: 1-2 tsp (for color)
Salt: To taste
Water: For soaking and grinding
Preparation Steps
1. Soaking the Rice
Wash 2 cups of raw rice (ration rice is recommended for texture) 2-3 times

Soak the rice in water for at least 4 hours.
2. Making the Batter
Drain the soaked rice.
In a mixer jar, add ½ cup of cooked rice, ⅓ cup of fresh coconut (peeled), and a little coconut water if available.

Add the soaked rice and enough plain water to grind.
Grind into a very smooth and fine paste. Do not leave it grainy
Transfer the batter to a bowl.
3. Fermentation
Cover the bowl with a lid and let it ferment overnight (or about 8 hours)

Do not mix or stir the batter before keeping it for fermentation.
4. Seasoning
The next morning, the batter will be ready.
Add a little sugar to give the dosa a beautiful golden color on the bottom.
Add salt to taste.
Mix gently until the sugar and salt are well incorporated. No baking soda is needed as the fermentation provides the fluffiness
5. Cooking the Dosa
Heat a dosa tawa (iron or non-stick).
Pour a ladle of batter. Do not spread it thin like a regular masala dosa; just spread it slightly

Cover with a lid and cook for a few seconds.
The dosa will naturally form many small holes (Gudu-Gudu texture)
Since the batter contains coconut, you don’t even need to use oil on the tawa.
Remove once the top is cooked and the bottom is golden. Only one side needs to be cooked.
Serving Suggestions
These dosas are best served with Potato Sagu (Alu Bhaji) or Coconut Chutney.
They are non-sticky even when stacked, making them ideal for kids’ lunch boxes.
