Ingredients
For the Green Masala Paste:
Coriander Leaves: 1 large bunch, fresh.
Green Chillies: 4-5 (adjust to your spice preference).
Ginger: 1-inch piece.
Garlic: 5-6 cloves.
Fennel Seeds (Saunf): 1 tsp (for aroma).
For the Bhurji:
Eggs: 4-5 large eggs.
Onions: 2 medium, finely chopped.
Tomatoes: 1 medium, finely chopped.
Oil: 2 tbsp.
Turmeric Powder: 1/4 tsp.

Step-by-Step Instructions
1. Prepare the Green Masala
In a mixer jar, add the coriander leaves, green chillies, ginger, garlic, and fennel seeds.

Grind into a smooth paste using very little water if needed. Set aside.
2. Sauté the Aromatics
Heat oil in a pan. Add the finely chopped onions.
Sauté the onions until they turn translucent and slightly golden.
Add the chopped tomatoes and cook until they soften.

3. Cook the Masala
Add the prepared green masala paste to the pan.
Mix well and sauté for 2-3 minutes until the raw smell of the ginger and garlic disappears.
Stir in the turmeric powder and salt.
4. Scramble the Eggs
Crack the eggs directly into the pan or whisk them in a bowl first and pour them in.

On medium heat, continuously stir and scramble the eggs so they incorporate with the green masala.
Continue cooking until the eggs are no longer wet and have reached your desired consistency.
5. Final Touch
Add a dollop of butter at the end for extra flavor and shine.
