
Restaurant-Style Vegetable Fried Rice
This classic Indo-Chinese style Vegetable Fried Rice features long, fluffy grains of Basmati rice stir-fried on high heat with crisp finely diced vegetables, garlic, ginger, and aromatic seasonings. The key to getting authentic restaurant-grade flavor at home lies in using cold, pre-cooked rice and quick wok-tossing over high flame to lock in the smoky flavor (wok hei) and maintain a light, non-sticky texture. Perfect for a quick lunch, weeknight dinner, or paired with Manchurian and chilly gravies.
Ingredients
- For the Rice:
- Pre-cooked Basmati or Long-Grain Rice: 3 cups (chilled in the refrigerator for at least 3–4 hours or overnight)
- Water & Salt: As required for boiling rice
- For the Vegetables & Aromatics:
- Garlic: 1.5 tbsp (finely chopped)
- Ginger: 1 tbsp (finely chopped)
- Green Chilies: 1–2 (finely chopped)
- Spring Onion Whites: ¼ cup (finely chopped)
- Carrots: ⅓ cup (finely diced)
- French Beans: ⅓ cup (finely chopped)
- Cabbage: ½ cup (finely shredded)
- Capsicum / Bell Pepper: ⅓ cup (finely diced)
- Spring Onion Greens: ¼ cup (chopped, for garnish)
- For Sauce & Seasoning:
- Cooking Oil: 2 tbsp (preferably high smoke-point oil like neutral vegetable or sesame oil)
- Soy Sauce: 1.5 tbsp (Dark or Light Soy Sauce)
- Vinegar (White/Rice Vinegar): 1 tsp
- Green Chili Sauce / Red Chili Sauce: 1 tbsp (optional for extra kick)
- Crushed Black Pepper: ½ tsp (freshly ground)
- Salt: To taste
- Sugar: ¼ tsp (optional, balances flavors)
Instructions
- Prepare and Chill the Rice
Cook Basmati rice until 90% done with salt and a few drops of oil. Drain the hot water completely, spread the rice out on a wide plate or tray, and let it cool completely. Store in the refrigerator for at least 2–3 hours. Chilled rice prevents the grains from breaking or turning mushy during stir-frying.
- Sauté Aromatics on High Heat
Heat 2 tablespoons of oil in a heavy wok or deep pan over high heat until smoking hot. Add the finely chopped garlic, ginger, and green chilies. Sauté continuously for 30–45 seconds until fragrant, ensuring they do not burn.
- Stir-Fry the Vegetables
Add the chopped spring onion whites, followed by carrots and French beans (as they take slightly longer to cook). Stir-fry on high flame for 1–2 minutes. Next, toss in the capsicum and cabbage. Stir-fry rapidly on high heat for another 1 minute so the vegetables remain colorful and crunchy.
- Add Sauces & Seasonings
Lower the heat slightly and add soy sauce, vinegar, chili sauce (if using), black pepper powder, salt, and sugar. Mix quickly into the vegetables.
- Combine and Wok-Toss
Add the chilled cooked rice into the wok. Turn the flame back to high. Gently toss and stir-fry the rice with the vegetables for 2–3 minutes using a flat spatula so every grain gets evenly coated without breaking.
- Garnish and Serve
Garnish with freshly chopped spring onion greens. Give it one final toss and turn off the heat. Serve piping hot alongside Veg Manchurian, Paneer Chilli, or spicy Schezwan sauce.
