Ingredients
- For the Dough:
- All-purpose Flour (Maida): 3 cups
- Salt: 1 teaspoon (or to taste)
- Oil: 3 tablespoons
- Water: As needed (to knead into a medium-soft dough)
- For the Onion Masala Filling:
- Oil: 2 tablespoons
- Onions: 4 to 5 medium-sized (thickly or finely sliced)
- Green Chilies: 3 to 4 (slit or chopped)
- Ginger-Garlic Paste: 1 teaspoon
- Spices: Turmeric powder, red chili powder, coriander powder, garam masala, and salt to taste
- Fresh Coriander Leaves: Chopped
- For Assembly:
- Hard-boiled Eggs: Cut into halves or quarters (depending on preferred portion size)
- Oil or Butter/Ghee: For layering and frying/baking
Instructions
- Prepare the Dough
In a large mixing bowl, combine the all-purpose flour, salt, and 3 tablespoons of oil. Gradually add water and knead into a smooth, medium-soft dough. Cover and let it rest for 15–20 minutes.
- Make the Onion Masala
Heat 2 tablespoons of oil in a pan. Sauté the sliced green chilies and chopped/sliced onions until translucent and tender. Add ginger-garlic paste and all the dry spices (turmeric, chili powder, coriander powder, garam masala, and salt). Cook until the onions absorb the spices well, then mix in fresh coriander leaves and turn off the heat.
- Roll and Layer
Divide the dough into equal-sized portions. Roll them out into thin sheets, apply oil or a flour-butter paste between layers to create flaky folds (bakery-style puff layers), and stack or roll them as demonstrated in traditional layered pastry techniques.
- Assemble the Puffs
Place a portion of the spiced onion masala and a piece of boiled egg into the center of your prepared pastry dough sheets. Fold and seal the edges tightly to secure the filling inside.
- Cook / Fry
Deep fry on medium-low heat until golden brown and crispy, or bake in an oven at the recommended temperature until the layers are flaky and golden.
- Serve
Serve hot with ketchup or mint chutney!
