Ingredients

  • For the Batter (Boondi):
  • 1 cup Gram flour (Besan)
  • Water (as required to make a smooth, medium-flowing batter)
  • A pinch of orange/yellow food color
  • Ghee or cooking oil (for frying)
  • For the Sugar Syrup (Chashni):
  • 1 cup Sugar
  • ½ cup Water
  • A pinch of cardamom powder (elaichi)
  • A few strands of saffron (kesar) or orange food color
  • A few drops of rose water or kewra water
  • A few drops of lemon juice (to prevent crystallization)
  • For Garnishing (Optional):
  • Chopped pistachios or melon seeds (magaz)

Instructions

  1. Prepare the Sugar Syrup
  2. Step 2

In a pan, combine sugar and water. Bring it to a boil over medium heat until the sugar dissolves completely.

  3. Step 3

Simmer the syrup until it reaches a sticky single-thread consistency. Add cardamom powder, food color, rose water, and a few drops of lemon juice. Turn off the heat and keep the syrup warm.

  4. Make the Besan Batter
  5. Step 5

In a mixing bowl, take the gram flour (besan) and gradually add water to whisk into a smooth, lump-free batter with a flowing consistency (similar to pancake batter). Mix in the food color.

  6. Fry the Boondi
  7. Step 7

Heat ghee or oil in a deep kadai over medium-high flame.

  8. Step 8

Hold a perforated ladle (jhara) over the hot oil and pour a ladleful of batter onto it, letting tiny droplets fall into the oil.

  9. Step 9

Fry the boondi until they are cooked through but not crispy or crunchy (they should remain soft). Remove them using a slotted spoon and drain excess oil.

  10. Soak in Syrup
  11. Step 11

Transfer the warm boondi directly into the warm sugar syrup. Mix well, cover, and let them rest for 10–15 minutes so the boondi absorbs all the syrup and becomes plump.

  12. Shape the Laddoos
  13. Step 13

Once the mixture cools down slightly and is comfortable to handle, grease your hands with a little water or ghee.

  14. Step 14

Take small portions of the soaked boondi mixture and tightly press them between your palms to shape them into round, perfect Motichoor Laddoos. Garnish with melon seeds or chopped pistachios if desired.
