Ingredients
Cabbage: 350g, finely chopped
Onions: 2 medium-sized, finely chopped
Garlic: 4–6 cloves, crushed
Green Chillies: 4–6, slit
Curry Leaves: 1 large sprig
Mustard Seeds: 1 tsp
Urad Dal (Black Gram): 2 tsp
Turmeric Powder: 1 tsp
Oil: Approx. 30ml (Sunflower oil used)
Salt: To taste
Preparation Steps
Tempering: Heat oil in a pan. Add mustard seeds and let them splutter. Add the urad dal and fry until it turns golden brown.

Aromatics: Add the crushed garlic and curry leaves to the pan.
Sautéing Vegetables: Add the chopped onions and green chillies. Sauté them well.
Adding Spices: Incorporate the turmeric powder and mix thoroughly.

Cooking the Cabbage: Add the finely chopped cabbage and salt. Mix everything well.
Simmer: Cover the pan with a lid. Note that there is no need to add water, as the moisture from the cabbage is sufficient for it to cook.

Final Result: Once the cabbage is tender and the moisture has evaporated, the Cabbage Upkari is ready.
