Indian Restaurant Style Kane (Ladyfish) Tawa Fry Recipe

Ingredients

Main

Ladyfish (Kane/Kandige): 1 kg (cleaned and slightly slit for masala absorption)

Oil: Coconut oil (preferred for authentic Tuluva taste)

Masala Base (For Roasting)

Coriander Seeds: 1 tbsp

Cumin Seeds (Jeera): 1 tbsp

Mustard Seeds: 1/2 tsp

Fenugreek Seeds (Methi): 1/2 tsp

Black Peppercorns: 1 tsp

Byadagi Dried Chillies: ~20 pieces (adjust for spice preference)

Turmeric Powder: 1 tsp

Ginger-Garlic Paste: 1.5 tbsp (or whole ginger/garlic pieces)

Tamarind (Punarpuli/Kokum): 1.5 tbsp (soaked/extracted)

Salt: To taste

Cooking Instructions

1. Preparing the Masala

Heat a small amount of coconut oil in a pan.

Add mustard seeds. Once they splutter, add the dried chillies and roast slightly.

Add coriander seeds, cumin, peppercorns, and fenugreek. Roast until fragrant.

Incorporate the ginger-garlic paste and turmeric powder.

Finally, add the tamarind pieces or pulp. Let the mixture cool down. 

2. Grinding

Transfer the roasted ingredients into a blender.

Add salt and a small amount of water.

Grind into a smooth, thick paste. The consistency should be slightly runny but thick enough to coat the fish.

3. Marinating

Dip the cleaned ladyfish into the masala paste, ensuring it is well-coated in the slits.

Let it sit for a few minutes to absorb the flavors.

4. Tawa Frying

Heat a flat Tawa (griddle) and spread coconut oil generously.

Place the fish carefully on the hot Tawa. Note: Ladyfish is very delicate; handle with care.

Fry on a low to medium flame.

After about 2 minutes, flip the fish gently.

Spoon the extra masala and oil from the sides of the pan back onto the fish to keep it moist and flavorful.

Continue frying until both sides are golden brown and cooked through. 

Tips

Versatility: This same masala can be used for other fish like Mackerel (Bangude), Pomfret, or Silver Fish (Boothai).

Heat Control: Always fry on a low flame to ensure the masala doesn’t burn while the fish cooks inside.
