Healthy Palak (Spinach) and Curd Recipe for Vegetarian

Ingredients

Spinach (Palak): 1 cup, finely chopped

Curd (Yogurt): 1 glass (thick and fresh, not too sour)

Oil: Mustard oil or regular cooking oil

Spices: Cumin seeds (jeera), Hing (asafoetida), Red chili powder, Coriander powder, Turmeric powder, and Garam masala

Aromatics: Garlic (chopped) and Onion (chopped)

Salt: To taste

Preparation Steps

1. Sautéing the Aromatics 

Heat a small amount of oil in a pan.

Add cumin seeds and a pinch of hing.

Add finely chopped garlic and sauté until the raw smell disappears and it turns slightly golden.

Add chopped onions and fry until they become translucent and light brown.

2. Adding Spices and Spinach 

Lower the heat and add red chili powder, coriander powder, turmeric, and garam masala. Mix for about 10 seconds.

Add the finely chopped spinach and salt.

Sauté the spinach on medium heat for 4–5 minutes until it becomes completely soft and cooked through.

Crucial Step: Turn off the heat and let the spinach mixture cool down completely.

3. Mixing with Curd 

Take a glass of thick curd and whisk it until smooth.

Once the spinach masala is cool, fold it into the whisked curd. (Mixing while hot may cause the curd to curdle).

Your healthy Palak Raita is ready to serve!
