- Black Peppercorns (काली मिर्च) – 1 tbsp / 10 grams
- Cloves (लौंग) – 1 tbsp / 5–10 grams
- Cinnamon Stick (दालचीनी - crushed) – 10 grams
- Fennel Seeds / Aniseed (सौंफ) – 2 tbsp
- Black Cardamom (बड़ी इलायची) – 4 pieces
- Nutmeg (जायफल) – 1 whole
- Dry Ginger Powder (सौंफ / सोंठ पाउडर) – 4 tbsp
- Basil Leaves / Tulsi (तुलसी के पत्ते / तुलसी मंजरी) – 1 tbsp
- For Making 1 Cup of Masala Tea:
- Water – 1 cup
- Tea Powder (चाय पत्ती) – 1.5 tsp
- Sugar (चीनी) – 1.5 tbsp (or to taste)
- Milk – 1 cup
- Prepared Chai Masala Powder – 1/4 to 1/2 tsp
Instructions
- Prepare and Dry Roast Spices
Lightly dry roast the whole spices (green cardamom, black peppercorns, cloves, cinnamon, fennel seeds, and black cardamom) in a pan for a couple of minutes on low heat to release their essential oils and remove any moisture. Turn off the heat.
- Crush & Add Extra Ingredients
Break the nutmeg and dry ginger into smaller pieces. Add them along with the basil/tulsi leaves and roasted spices.
- Grind to Powder
Allow all the ingredients to cool down completely. Transfer them to a mixer-grinder jar and grind them into a fine or semi-coarse powder.
- Store
Let the freshly ground chai masala cool completely, then store it in an airtight glass or plastic container at room temperature for up to 4 months.
- Brewing the Chai
To brew a cup of masala tea, boil 1 cup of water with tea powder and sugar. Add milk and a pinch (1/4 to 1/2 tsp) of the prepared chai masala powder. Simmer well, strain into cups, and serve hot!
