
Crispy Bitter Gourd Dry Fry (Karela Fry / Kakarakaya Vepudu)
A flavorful, crispy Indian dry vegetable preparation featuring thin roundels of bitter gourd tossed with aromatic spices, roasted flours, and a touch of tanginess. By marinating and squeezing out excess bitter juice, this dish removes harsh bitterness while retaining a delightful crunch. It makes a perfect health-packed side dish alongside dal-rice, sambar, or hot rotis.
Ingredients
- For Bitterness Reduction:
- Bitter Gourd (Karela): 500 g (sliced into thin roundels)
- Salt: 1 tsp
- Tamarind Paste or Lemon Juice: 1 tsp
- For Crispy Coating & Seasoning:
- Turmeric Powder: ½ tsp
- Red Chili Powder: 1 tsp (adjust to taste)
- Cumin-Coriander Powder: 1 tsp
- Amchur Powder (Dry Mango Powder) or Tamarind Paste: ½ tsp
- Asafoetida (Hing): ¼ tsp
- Gram Flour (Besan): 1 tbsp
- Rice Flour: 1 tbsp
- Cooking Oil: 3–4 tbsp (for pan-frying)
- Mustard Seeds / Cumin Seeds: ½ tsp
- Curry Leaves: 8–10 leaves (optional)
Instructions
- Prep and De-bitter the Gourd
Takes ~30 minutes rest time.Wash the bitter gourds thoroughly, trim both ends, and cut them into thin, uniform roundels.In a mixing bowl, combine the sliced bitter gourd with 1 tsp salt and 1 tsp tamarind paste (or lemon juice). Mix well to coat evenly.Cover and let it sit for 30 minutes. The salt will extract the bitter juices.

Squeeze the bitter gourd roundels firmly between your palms to drain and discard the excess liquid.
- Coat with Spices and Flours
Transfer the squeezed bitter gourd roundels back to a dry bowl.Add turmeric powder, red chili powder, cumin-coriander powder, amchur powder, hing, gram flour (besan), and rice flour.Toss well until all pieces are evenly coated with the dry spice and flour mixture.
- Pan Fry to Perfection
Heat oil in a heavy-bottomed or cast-iron kadai on medium heat.Add mustard/cumin seeds and curry leaves; allow them to splutter.Add the spice-coated bitter gourd slices in a single layer.Roast on low-to-medium flame for 15–20 minutes, stirring occasionally, until the roundels turn golden-brown, crispy, and cooked through.

Turn off the heat and serve hot as a side dish with rice and dal or chapatis.
