
Crispy South Indian Medu Vada (Urad Dal Vada)
Medu Vada is a popular South Indian snack made from black gram lentils (urad dal), seasoned with aromatic spices, curry leaves, crushed pepper, and green chilies. Shape into doughnut-like rings and deep-fried to perfection, these vadas feature a golden, crunchy exterior with a soft, fluffy interior. They are traditionally served hot alongside coconut chutney and piping-hot sambar for breakfast or evening tea.
Ingredients
- 1 cup Whole skinless urad dal (black gram)
- 1–2 tbsp Water (use sparingly while grinding)
- 1–2 Green chilies, finely chopped
- 1 inch Ginger, finely chopped or grated
- 10–12 Fresh curry leaves, finely chopped
- ½ tsp Whole black pepper, crushed
- ½ tsp Cumin seeds (jeera)
- 1 pinch Asafoetida (hing)
- 2 tbsp Rice flour or semolina (rava) (optional, for extra crispness)
- To taste Salt
- For deep frying Vegetable oil
Instructions
- Soak the Dal
Prerequisite: 3 to 4 hours ahead.Rinse 1 cup of skinless urad dal thoroughly under cold water until the water runs clear. Soak in clean water for at least 3 to 4 hours.
- Grind to a Fluffy Batter
Key: Use minimal water.Drain the soaked dal completely. Transfer to a wet-grinder or heavy-duty food processor. Grind into a smooth, thick, and fluffy batter, adding only 1 to 2 tablespoons of ice-cold water if absolutely necessary.
- Aerate the Batter
Ensures soft and light interior.Transfer batter to a large mixing bowl. Using your hand or a whisk, beat the batter vigorously in one direction for 2–3 minutes to incorporate air. Test batter readiness by dropping a small droplet into a bowl of water—if it floats, it is ready.
- Season and Mix
Add chopped green chilies, ginger, curry leaves, crushed black pepper, cumin seeds, asafoetida, salt, and optional rice flour. Mix gently until evenly distributed.
- Shape the Vadas
Moisten both hands with cold water. Take a lemon-sized portion of batter, roll into a smooth ball, and flatten slightly on your palm. Use your thumb to make a clean hole in the center.
- Deep Fry to Perfection
Heat oil in a deep pan on medium-high heat. Carefully slide the shaped vada into hot oil. Fry on medium heat, turning occasionally, until both sides turn crisp and golden brown. Drain on paper towels and serve immediately.
