It combines the creaminess of custard with the texture of vermicelli (sevai) and fresh fruits.
Ingredients
For the Base:
Milk: 500ml (Full fat preferred)
Vermicelli (Shavige): As per requirement
Ghee: 2 tsp
Sugar: 1/2 cup (adjust to taste)
Custard Powder: 2 tbsp (Vanilla flavor)
Cardamom Powder: 1 tsp
Water: A small amount to mix the custard powder
For Assembly:
Sabja Seeds (Sweet Basil/Kamkasturi seeds): 1 tbsp (soaked in water)
Fresh Fruits (Chopped): Mango, Grapes, Pomegranate, Banana, Apple
Dry Fruits & Tutti Frutti: For garnishing
Ice Cream: (Optional) Vanilla or any preferred flavor
Cherry: For decoration
Preparation Steps
1. Prepare the Sabja Seeds
Soak 1 tablespoon of sabja seeds in water. They expand very quickly (within 10-20 seconds) and provide a cooling effect to the drink.
2. Prepare the Custard Vermicelli Base
Heat 2 teaspoons of ghee in a pan and roast the vermicelli until it turns a light golden brown.
Add 500ml of milk to the pan and let the vermicelli cook in it.
In a separate small bowl, mix 2 tablespoons of custard powder with a little water to make a smooth slurry.
Add 1/2 cup of sugar to the boiling milk and stir until dissolved.
Slowly pour the custard slurry into the boiling milk while stirring continuously on medium flame until the mixture thickens.
Add cardamom powder for aroma, let it boil for a minute, then turn off the heat and let it cool down completely.
3. Prepare the Fruits
Wash and finely chop all the fruits (mango, grapes, apple, banana, etc.) into small pieces.
4. Layering the Falooda
To assemble, take a tall glass and layer the ingredients in the following order:
Bottom Layer: Soaked sabja seeds.
Fruit Layer: A mix of chopped pomegranate, apple, mango, banana, and grapes.
Topping: A few dry fruits and tutti frutti.
Creamy Layer: Pour the cooled custard-vermicelli mixture.
Repeat: Add another layer of sabja seeds and fruits.
Final Touch: Top with a scoop of ice cream, a cherry, and more dry fruits/tutti frutti for garnish.
Serving Suggestion
Serve chilled. You can also make a simpler version called “Fruit Salad” by omitting the vermicelli and using just the custard milk and fruits.
