2. Seasoning the Base
Add more water to adjust the consistency to your liking.
Add red chili powder, turmeric powder, 1/2 tsp cumin powder, and 1/2 tsp coriander powder.

Incorporate tamarind juice and jaggery according to your taste preference.
Add salt (to taste) and bring the mixture to a rolling boil.
3. Preparing the Tempering (Oggarane)
In a separate small pan, heat some oil.
Add mustard seeds and let them splutter.

Add hing (asafoetida), dried red chilies, and fresh curry leaves.
Crucially, add crushed garlic and sauté for a few seconds until fragrant.
4. Final Touch
Pour the hot tempering into the boiling tomato mixture.
Add finely chopped fresh coriander leaves.

Give it a final mix and boil for another minute or two.
